Small batches.
No shortcuts.

Every origin below is cupped before it ships. If we wouldn't serve it at the bar, we don't sell it in a bag.

03 — The process

Bean to bag in four steps.

01

Source

We buy green coffee direct from farms we visit — long-term relationships, fair prices, and full traceability back to the producer.

02

Roast

Small 12-kg batches on a 1970s Probat, profiled by hand. Every roast is cupped before it leaves the roastery door.

03

Rest

Bags rest for 4–7 days after roasting — never rushed — so the coffee peaks in your cup, not on our shelf.

04

Ship

Roasted-to-order every Tuesday, packed in sealed valve bags and shipped within 24 hours. Free shipping over $40.

04 — The café

A room built for lingering.

Twelve seats when we opened. More now, but the rule hasn't changed — nobody hurries you out.

05 — Word of mouth

Don't take our word.

Skyline outsells everything else on our bar, and our customers ask about it by name. Milo's cupping notes are more useful than most training manuals.

I've been coming every morning for three years. They don't just remember your order — they remember your week.

The subscription is the easiest good habit I have. New origin every month, roasted the Tuesday before it lands.

A flat white that tastes like the beans, not like the milk. This is what a coffee shop run by a roaster feels like.
